While you might think you can just take a standard color image and desaturate it to get the same result, black and white cameras can generally produce superior results because there is no light loss at the color array, allowing them to record more luminance. Not only does this result in better tonality and smoother transitions, it also means better high-ISO performance, making such cameras excellent for low-light work as well.
